HOUSE RESOLUTION

WHEREAS, In 1948, Frank and Florine Saputo started a Springfield tradition of serving fine Italian food; the Capital City and the Illinois House of Representatives are proud of the restaurant's heritage where they serve old world family recipes and maintain a standard of quality and excellence in both food and service; and

WHEREAS, Mike and Sandy (Saputo) Coffey have helped make downtown Springfield a popular destination for everyone from Illinoisans to foreign travelers; the second generation of the Saputo family opened a second restaurant at the end of East Monroe at an intersection known at the time as Twin's Corner; and

WHEREAS, Saputo's specializes in Italian food with recipes greatly influenced by the cuisine of southern Italy; and

WHEREAS, According to food critics, Saputo's serves some of the best Italian food available in the entire Midwest; and

WHEREAS, Foodies should be warned that reservations are mandatory at Saputo's, even for couples, unless you plan on eating by yourself; and

WHEREAS, Now in its fourth generation of family running the restaurant, Saputo's has become a favorite destination that attracts travelers, local, State, and federal politicians, dignitaries, and even television personalities; therefore, be it

RESOLVED, BY THE HOUSE OF REPRESENTATIVES OF THE ONE HUNDREDTH GENERAL ASSEMBLY OF THE STATE OF ILLINOIS, that we recognize the 70th anniversary of Saputo's on April 27, 2018 and we congratulate Mike and Sandy Coffey on making Saputo's a destination restaurant; and be it further

RESOLVED, That a suitable copy of this resolution be presented to Mike and Sandy Coffey as a symbol of our respect and esteem.
